Today, we are reviewing Bojangles’ Pork Chop Griller Biscuit. This limited-edition offering is part of the Bojangles Biscuit sandwiches line, typically released annually in the fourth quarter. It consists of boneless seasoned pork loin on a buttermilk biscuit bun.
Jack Fulk and Richard Thomas founded Bojangles in 1977 in Charlotte, North Carolina. As of 2023, it has 818 restaurants. Although it operates franchises in 17 states and Honduras, it remains primarily a regional chain serving the southeastern United States, particularly North Carolina.

Pork
Although many Bojangles biscuits are served with meats that are fried, this is not the case with the Pork Chop Griller. As the name indicates, the pork is grilled and seared with a mix of chili pepper spices. The pork was quite flavorful. It wasn’t overly spicy, but the spices contribute nicely to the flavor profile. For the most part, the pork was on the tender side – although, on each of the Pork Chop Grillers, I picked up a couple of tougher sections. Still, the meat was seared nicely and not overly dry.

Biscuit
Bojangles makes a very good buttermilk biscuit. It is baked enough to create a nice crust while maintaining enough flakiness.

Intangibles
In general, I found the flavor of this sandwich to be enjoyable. The combination of the seasoned grilled pork chop and the buttermilk biscuit works well together. However, it is somewhat of a practical pairing, as the biscuit serves as a means to eat the pork chop by hand, eliminating the need for a fork and knife.
The Pork Chop Griller will not fill you up. My suggestion is to get either a second biscuit or go for a combination meal.

OVERALL ASSESSMENT
Overall, the Bojangles Pork Chop Griller Biscuit delivered a pleasant experience. The pork is good, the biscuit is good. Can I say the experience is greater than the sum of the parts? No. It’s pretty much a biscuit and a seasoned pork chop, so no magic was put together. One nice thing about the Pork Chop Griller biscuit is that it offers a meat option for a biscuit sandwich that is not deep-fried. In the end, if the Pork Chop Griller comes around once a year, I’ll get it. At the same time, I’m not sure this is worth stashing away. Coming in at 6.50 points, I’d still assess this as above average.
